Maple Tapping

This week's early brilliant sunshine prompted us out to tap the maple bush!

The sap is flowing and while the nights are cold and the days warm in sunshine our trees pump just an incredible amount of water up from their roots to support their Spring preparations. We tap into this and draw a minute fraction of their reserves to boil down for the delicious treat of maple syrup (best over bacon but over pancakes will do if you must <g>). This year we're going to try a new method of boiling down which should prove very efficient and wicked cool. Stay tuned for details...
